The family behind Celina Star Cafe is preparing to expand with Brunch Factory, an upscale breakfast and lunch restaurant planned for Celina West along Preston Road. Owner Toni Mehmedi and his family are targeting a spring 2027 opening for the location near Costco, although that schedule is not yet firm.
The new restaurant will offer a modern setting, more space and alcoholic beverages, giving the family a different way to serve the community after nearly a decade in business. Celina Star Cafe will retain its familiar diner atmosphere as the owners develop the separate concept. The original cafe reaches its 10th anniversary in June 2027.
Brunch Factory's menu remains under development. Plans include comfort-food dishes such as biscuits and gravy, chicken-fried chicken and chicken-fried steak, along with new offerings intended to distinguish the restaurant from others nearby. Creative beverages and fresh approaches to traditional brunch dishes are also part of the concept.
The owners described the distinction between the two restaurants in comments to Local Profile. “Celina Star is always going to be the small-town diner feel,” they said. “Brunch Factory will be more upscale.” Their plans for the new location combine that change in atmosphere with a more ambitious approach to the menu.
The expansion reflects changes the Mehmedi family has watched unfold around Celina over the past decade. Rapid growth has brought residents, businesses and major retailers to the city, including Costco and its first Walmart Supercenter. Seeing development along Preston Road helped inspire the family's plans for a new restaurant designed around its own preferences.
The owners told Local Profile they want Brunch Factory to serve both customers who have supported Celina Star Cafe since its early days and people who have recently moved to the area. Costco's proximity played a significant role in their choice of location, as did support from the development team.
Brunch Factory is one of two restaurant projects the family has planned for the development. The owners also disclosed plans for GyroHaus on its east side. According to the family, construction of that restaurant's building is expected to be completed around March or April 2027.
For Brunch Factory, the family hopes to receive the building by the end of December 2026 and then spend approximately four months preparing to open. With the timing still tentative, the owners are working toward a restaurant that offers a different dining experience while continuing their focus on giving Celina residents a place to gather over a meal.
